THE TEMPERATURE FIELD INSIDE INDUSTRIAL CYLINDROCONICAL TANKS DURING FERMENTATION PROCESS

In this work the experimental investigations of the temperature field in an industrial cylindrical-conical tank are presented. This work represents a part of the main research “determination and analysis of the convective flow phenomena in cylindroconical fermenting tanks” [1, 2, 3]. Temperature fields and velocity fields during a real fermentation process were measured. For the investigation of the fluid mechanics and the heat distribution inside the fermenting and storage tank an industrial cylindroconical tank (30.000 litres) with special design features was developed. The measurement of the temperature fields inside of the fermenting tank is carried out by means of a conventional temperature measurement method with a grid arrangement of 43 resistance temperature detector elements. 10 more sensors are installed vertical to the wall to measure the temperature behaviour in the wall region. The temperature measurement was carried out every 2 minutes during 30 days of fermentation and storage period.
