A simple model for estimating specific heat and enthalpy versus temperature in the range of phase change. Application to food products

A simple model based on the network simulation method is presented in this paper for estimating the specific heat and the enthalpy versus temperature in inverse problem form. 1-D planar and spherical geometry for simplicity, and convective type boundary condition are used. First, the direct heat conduction problem is numerically solved using the exact values of specific heat, enthalpy and conductivity, which are defined by tables or piece wise functions. The set of discrete temperatures obtained, which are affected by a random error, is part of the input data for the inverse problem. Both the specific heat and enthalpy inverse solution, for which the Network Simulation Method (in conjunction with simple auxiliary programming routines) is also applied, is obtained numerically by means of piece-wise functions, which are constructed by stretches of variable slope and size. When applied to food products the inverse solution is very close to the exact values.
