A numerical and experimental study on the vacuum freeze-drying process of skim milk solution in a vial
Abstrakt
Temperature histories at different positions inside a vial were measured during freeze-drying experiments of
skim milk under same process condition. By combining the measured temperature histories, we obtained
temperature distribution fields, which show curved configuration of sublimation interface and asymmetric
temperature distribution inside the vial. Along with the experiment, a numerical calculation was conducted to
predict the process using a finite volume method with a moving grid system. Good agreements between the
numerical and experimental results were observed.
